Sunday Supper: Texas Chili
HOWDY y'all!
Kate's Add: Beans, beans, beans! I need to add me some beans in this recipe! Although I am 100% Texan.. And call me crazy but I also love this chili with oyster crackers ...(Trader Joe's has a box of Soup and Oyster Crackers in this blue box that really hits the spot!)... Reminds me of my Grammy. :)
Laura's Spin: Serve this chili over ...Trader Joe's Organic Corn Chips (OMG seriously -- they are ridiculously delicious)... with shredded cheddar cheese and chopped green onions. You can also add a little sour cream or plain Greek yogurt to soften the spiciness!
Ready for another warm-up-yo-bones Sunday Supper and the fierce competitor for our chili cook-off? I can't resist sharing my mom's own Texas Chili recipe with you. It's a classic in our family and well-loved by all! If you are looking for a fool-proof traditional chili recipe, this one's for you!
Ingredients:
2 lbs ground meat (I use half turkey, half beef, but you can do all of either as well.)
If you like it hot, hot, hot:
14 oz can diced or crushed tomatoes with juice
2 10oz cans beef broth
1-2 TBSP olive oil
1-2 TBSP olive oil
1 large onion, chopped fine
1 green bell pepper, chopped fine (optional)
1 green bell pepper, chopped fine (optional)
2 garlic cloves, minced (or 1 TBSP jarred minced garlic)
2 bay leaves
1/2 cup chili powder
1 TBSP cumin
1 TBSP oregano
2 tsp paprika
2 tsp salt
If you like it hot, hot, hot:
1 tsp cayenne pepper
2 jalapenos, minced
Instructions:
Brown ground meat in a large pot until cooked through. Drain any excess grease and set meat aside in large bowl. Using the same soup pot that you used for the meat, saute onions, garlic, and jalapeno (if using) in olive oil until golden and soft. Add meat back into the soup pot along with tomatoes, broth, and all spices. Cook slowly on medium-low heat, covered, for 2 hours, stirring occasionally. Add salt to taste as needed.

The ingredients need time to meld together, so be sure to cook it for at least 2 hours for maximum flavor!
Feel free to add beans such as dark red kidney beans, but just know that a true Texas chili is bean-free!
